Wine Profile
Wine Profile / Tasting Notes
Braudiano has a minimum ageing of 36 months in wood barrel and at least one year in bottle before commercialization. This wine presents a huge structure, with fruity, spicy and floral marks that, together with tannins, contribute to the elegance of this wine that improves in his first twenty years and preserves his structure in the subsequent years.
Vineyard Notes
Clayey-Sandy soil.
Production Notes
Harvesting and sorting of the grapes by hand in small 15 kg boxes. After destemming, the must is left to macerate in large 25 hl barrels with the skins at a temperature between 28° and 30° for 40 days. The pressed wines are separated and a part of then reassembled to have the right polyphenolic content which will allow the wine to last over time. The malolactic fermentation takes place in large 25hl barrels where the wine remains for about 48 months. This allows us to safeguard the fruit by not having the use of barriques and therefore extend the life of this product which already comes out almost 10 years after the harvest. Further 12 months of refinement in the bottle before being marketed.
Winemaker Notes
The Taurasi Braudiano is only produced in the best vintages, it is made after older grapevine and it is the result of a careful selection of Aglianico grapes grown around the cantina in the town of Castelfranci, at 690 meters above the sea level with south-west exposure and a yield of about 40/45 quintals per hectare.
Food & Wine Pairing
Perfect with rich main courses based on roasted or stewed meat and with long-aged cheeses.
