Wine Profile
Wine Profile / Tasting Notes
The Etna Bianco Bizantino 2021 from Produttori Etna Nord is a standout white wine that captures the essence of the Etna region. This wine, made from 60% Carricante and 40% Catarratto grapes, exhibits a straw-yellow color and presents a complex bouquet of citrus, floral fragrances, and hints of white fruit. On the palate, it is fresh and savory, with a pronounced mineral vein that reflects the volcanic soils of its origin.
Vineyard Notes
The soil is volcanic in origin, of varying depths. It has a sub-acid reaction and is rich in organic substances. Soil texture is loamy-sandy, with an abundance of skeleton grains in certain areas of the vineyard.
Soils are generally fertile, well-drained and with excellent root exploration. Cover crops with leguminous and/or grass species are grown from planting.
Production Notes
The wine undergoes cryomaceration for 6 hours, followed by fermentation in steel at controlled temperatures (13°-15°C). A portion of the wine (1/3) is aged in barriques for 2-3 months, adding depth and complexity to its profile.
Annual production 2000/5000 0.75 cl bottles - 500 1.5 l magnums
Winemaker Notes
White wine from Carricante and Catarratto grapes with a straw-yellow hue and magnificent flavour. Powerful aromas; it is an immersion in the Mediterranean and pure volcanic emotion. Honey, yellow flowers and citrus fruits proudly proclaim its territorial identity. That sense of sea that is present everywhere on Etna even when you do not see it, with a tangy, salty mineral vein that tastes of surf, cliff-face, oysters and clams, and the sun beating down directly over the Byzantine ruins of its vineyards.
Food & Wine Pairing
Appetizers, first and second courses with white meat, raw fish
