Winemaker Notes
The Vermentino Smeralda from Tenute Smeralda is a testament to the exceptional terroir of Sardegna. This wine is crafted using only free run must from a soft press, ensuring the highest quality juice. The must undergoes a cooling process at 10-12°C before fermentation, which is meticulously carried out at controlled temperatures of 14-15°C to preserve the delicate aromas and flavors. The wine is then refined in stainless steel tanks with batonnage, enhancing its texture and complexity. The result is a vibrant Vermentino with a fresh and elegant profile, featuring notes of citrus, white flowers, and a hint of Mediterranean herbs, balanced by a crisp acidity and a lingering mineral finish.
Food & Wine Pairing
Ideal with all seafood recipes, light summer salads and fresh cheeses.
Aging
Tenute Smeralda is a young agricultural company founded as a continuation of the Cocco Francesca company, which has been operating in the wine-growing sector for about 50 years. The company is located in Donori, South Sardinia, in the Parteolla area, which, thanks to its microclimate, is particularly suitable for the cultivation of native vineyards, such as Vermentino and Cannonau. The latter is known for its high content of procyanidinis, a powerful antioxidant and known as elixir of life.
