Wine Profile / Tasting Notes
Very pleasant sparkling wine with fine and elegant perlage. Fragrant bouquet with delicate notes of peach, citrus, wild flowers followed by typical aromas coming from the yeast such as pastry-like notes and marzipan. Almond and toasted bread in the finish. The taste is dynamic and refined at the same time, with great minerality. Full-bodied, elegant and harmonious sparkling wine, with a rich, young and fresh fragrance.
Vineyard Notes
Vineyard location: Collio, Ruttars, in the municipality of Dolegna. Soil type: layers of marls and sandstones, so called "Ponca", rich in limestone and silica. Altitude: 100 mt above sea level. Training system: bilateral guyot. Density: 4,600 plants per hectare. Yield: 1.5 kg per plant.
Production Notes
Pneumatic press allows to protect the must from oxidation. The extraction is made through “soft pressing” at 0.2 atm, which may be compared to the pressure of fingers. Color, typicality and scent potentiality remain unchanged and fresh. The preservation in stainless steel tanks and the aging in bottle, supported by suitable temperatures in each phase, complete the wine quality.
Winemaker Notes
First in Friuli, we've been interpreting traditional method since 1978. In 2005 this original and innovative cuvee was created and we were the first who believed in the peculiarities of Ribolla Gialla. The first wine of this kind produced using the traditional method, obtained solely from the grapes grown in the area of production of Collio. Greatest expression of wine-making technique and art.
Food & Wine Pairing
Ideal as an aperitif or with Sunday brunch. Pairs well with rich appetizers and soups, fish and white meats. Pay particular attention to serving temperature, not too low (approx. 8°c or 44°f) to catch all the nuances of this unique and extraordinary classic method sparkling wine, made of white grapes.
