Wine Profile / Tasting Notes
This beautiful Metodo Classico Blanc de Noirs, is the result of reflection and patient experimentation. Optimum effervescence, fine and persistent. The nose denotes intense, clean and pleasing aromas that start with hints of raspberry and allows your senses to run from there. Notes of cedar, toasted almonds, candid ginger and lemon curd are accompanied by great minerality and sapidity. Its zesty acidity makes it a great food wine that can be enjoyed with a great variety of dishes.
Vineyard Notes
Vineyard location: Collio, Ruttars, in the municipality of Dolegna. Soil type: layers of marls and sandstones, so called "Ponca", rich in limestone and silica. Altitude: 100 mt above sea level. Training system: bilateral guyot. Density: 4,800 plants per hectare. Yield: 1.5 kg per plant.
Production Notes
The extraction is made through a “soft pressing” at 0.2 atm, which may be compared to the pressure of fingers. Color, typicality and scent remain unchanged and fresh. This is how pleasant and fruity white and rosé wines can be obtained. The preservation in absolutely stainless steel tanks and the aging in bottle, supported by suitable temperatures in each phase, complete the wine quality.
Winemaker Notes
Villa Parens was the first winery in Friuli, since 1978, to focus on the interpretation of traditional method creating wines that are obtained solely from the grapes grown in Collio area. Their wines are the result of long considerations and patient experimentations.
Food & Wine Pairing
Ideal as an aperitif but we also recommend accompanying an entire meal with this wine. Excellent with pasta, salads, meat, cheese, charcuterie boards and seafood. An extremely versatile wine!
